Roasted chicken with new potatoes and chives

Tonight we had roasted chicken for dinner. We had a side of new potatoes tossed in oil and chives and a side of fresh veggies. It was delicious (well I didn't eat the chicken but everyone else said the chicken was mmm-mmm-good.)

To make the roast chicken:

1. Preheat the oven to 400 F.
2. Place the chicken on its side and cook for 30 minutes.
3. Turn onto its other side and cook for an additional 30 minutes.
4. Turn it breast down and cook for an additional 40 minutes.
5. Check to make sure the chicken is fully cooked (170 F); if not, cook until fully cooked.

To make the potatoes:

1. Boil the new potatoes until fork tender.
2. Cool slightly and cut potatoes.
3. Chop fresh chives and add to potatoes.
4. Drizzle olive oil onto, sprinkle with salt and toss to evenly coat.
