Steak Fajitas

We've been eating a lot of Mexican lately, but who's complaining?

The other day I made steak fajitas for dinner with cilantro rice and homemade salsa:

Everyone was satisfied and full when the meal was over.


To make the rice rinse 2 cups of rice, then sauté the rice with a hefty pinch of salt in some oil for a minute or two (do not burn the rice). Add 3 cups of water, bring to a boil, then reduce to a simmer and cook for 10-15 minutes (until soft and fluffy). Remove from heat, add chopped cilantro, season with more salt if needed, serve and enjoy!


To make the salsa chop up 2 tomatoes, 1/2 an onion, and a handful of cilantro. Place in a bowl and mix.  Juice 2 small fresh lemons (or 1 big one), add to the mixture. Season with salt, pepper and cumin to taste. Serve and enjoy!


To make the fajitas cook the steak to your liking, then add in and sauté 2 thinly sliced bell peppers (colors of your choosing) and 1/2 thinly sliced onion until tender (3 minutes or so) in the Mexican seasoning (I just sprinkle some on...maybe about 2 spoonfuls).


To make the homemade Mexican seasoning mix:

1/4 cup paprika
2 teaspoons cayenne pepper
2 tablespoons salt
2 teaspoons ground white pepper
2 tablespoons black pepper
2 tablespoons granulated garlic
2 tablespoons chile powder
2 tablespoons oregano

together in a bowl, transfer to a reused salsa container and store with your spices for when the craving for comida mexicana strikes. Bien provecho!
