Sorry that I didn't make a post yesterday, but the day got away from me and before I knew it it was late and I was tired and headed for bed. I did eat my raw meal though:
Apple and celery salad
1. Soak 1/2 cup of macadamia nuts overnight
2. The next day blend macadamia nuts with olive oil and water to make creamy
3. Cut up 1 apple and toss in lemon juice
4. Cut up 1 celery stalk and add to apple pieces
5. Add creamy mixture to the celery and apple, mix and enjoy!
Tonight I had a spinach salad with grapefruit, walnuts and pecans
1. Rinse spinach
2. Add grapefruit and nuts
3. Toss with dressing of choice (or lemon juice or nothing) and enjoy!
