For all of you taking my raw food challenge, here is some inspiration to think outside the "box".
Zucchini "Pasta" with Spinach Pesto
Ingredients:
1 zucchini
a handful of spinach
1 clove of garlic
lemon juice
olive oil
salt
To Make:
1. In a food processor, process the spinach and garlic to break them up.
2. Add the olive oil while the processor is on until you have your desired consistency (I used about 1 tablespoon).
3. Use a peeler to cut the zucchini into thin strips.
4. Sprinkle with lemon juice and salt to taste.
5. Toss the zucchini with the pesto, serve and enjoy!
1 zucchini goes a long way! So it's a cheap and delicious meal.
